Our visit was more than just a meal; it was a front-row seat to culinary artistry, led by the incredibly talented Chef Joel Hammond. Watching Chef Hammond in the kitchen is like witnessing a magician at work. Every movement is precise, every ingredient treated with reverence. His impressive pedigree, which includes time spent working directly under a "who's who" of the culinary world like Chef Momofuku (Michelin star restaurateur) and Chef Masaharu Morimoto (Iron Chef and a Global Restaurant Empire), is evident in his innovative approach and flawless execution. He doesn't just cook; he composes. This makes Uchi West Hollywood a definite Foodie Hotspot and home to some of the best food in Los Angeles, Ca.


The Architect of Flavor: Chef Joel Hammond



Before a single plate arrived, we had the privilege of observing Chef Hammond during a pre shift staff meeting. His focus is intense, yet there's a calm confidence that permeates not only in his corner of the kitchen but within the entire venue. You can also see the lessons learned from his mentors in the way he handles a knife and the respect he gives to each component of a dish. This isn't just about following recipes; it's about a deep understanding of flavor, texture, and the delightful surprise of the unexpected. His passion is palpable, and it translates directly onto the plate, turning a meal into a memorable story.


A Symphony of Dishes

Uchi’s menu is a playground for the senses, offering a departure from traditional Japanese fare. Each dish is a carefully constructed masterpiece, designed to be both beautiful and unbelievably delicious. Our culinary journey was a testament to this philosophy.




Bluefin Tataki

First was the Bluefin Tataki which showcased the kitchen's creative genius. Lightly seared bluefin tuna was paired with an imaginative combination of candied shiitake mushrooms, crisp singo pear, and a smoked blueberry ponzu. The sweetness of the candied shiitake and the smoky, fruity notes of the ponzu created a stunning contrast to the rich flavor of the tuna. It was a complex, layered dish that revealed new dimensions with every bite.


Hama Chili

Next to arrive was the Hama Chili, a vibrant and refreshing start. Delicate slices of yellowtail lay in a pool of bright ponzu, punctuated by the subtle heat of Thai chili and the sweet citrus burst of orange supreme. It’s a dish that wakes up your palate, a perfect harmony of acid, spice, and the clean flavor of premium fish. Each bite was a bright, zesty explosion that set a high bar for the rest of the evening.


San Francisco Black Cod

The star of the hot dishes was undoubtedly the San Francisco Black Cod. Cooked to absolute perfection, the fish was flaky and buttery, melting away on the tongue. What truly elevated it was the fish caramel—a savory, sweet, and umami-rich glaze that defies description. Complemented by a fresh chimichurri and market peppers, this dish was a masterclass in balancing bold flavors. It’s the kind of plate you think about long after you’ve left the restaurant.


Nigiri That Redefines Sushi

You can’t visit a place like Uchi without experiencing the sushi. The Nigiri was, in a word, sublime. Each piece was a testament to the quality of the ingredients and the skill of the chefs. The rice was perfectly seasoned and served at just the right temperature, providing the ideal foundation for fish so fresh it was practically melt-in-your-mouth. This isn't just sushi; it's an art form, served one perfect bite at a time.
