A Brewery Opened in Chinatown Where You Can Order a Beer at 7 a.m. or an Espresso at Midnight

“You can have a beer at seven in the morning, or you can have an espresso at midnight.”
That is Tohm Ifergan describing what he built at 843 North Spring Street, a corner unit in Chinatown directly across from the Metro station. It opened in early October.
Niteglow And Dayglow Are Not The Same Thing
Worth clearing up, because the signage and the Google listing both read “Dayglow | Niteglow” and that has confused people.
Dayglow is the coffee company, with locations in Larchmont, West Hollywood, Silver Lake, Venice, Chicago and Brooklyn. Niteglow Beer Company is a separate brand, a licensed farm brewery that started in Brooklyn. The Chinatown site runs both in one room. Dayglow's Brooklyn location does the same.
Early reporting framed this as a day and night split, coffee in the morning and a taproom after dark. The operators have since described it differently, and the 7 a.m. to late hours bear that out. It is one all-day room, not a shift change.
The Beer Is The Unusual Part
Niteglow's stated interest is terroir, which is a wine idea applied to beer. The company describes making “single origin beer with a focus on flavor, terroir and discovery in every sip,” and says it is brewing its New York recipes with California-native ingredients to see what changes.
The technique matches the ambition. Decoction and step mashing, lower alcohol, balance over intensity, and Lukr side-pull faucets.
Czech-style milkpours. The signature. A tall glass under a thick, dense cap of foam. Full pints are also available if you want the familiar version.
Hoppy H01. Grapefruit and pineapple notes.
Malty M01. A smooth amber lager with hints of chocolate and citrus.
Guava sours and prickly pear beers, which is where the California ingredient idea shows up most directly.
Also behind the bar. Espresso, wine and cocktails.
The Room And The Building
About 2,000 square feet inside, with roughly a third given over to the brewery itself, plus a 500 square foot patio and glass-walled doors that open onto the street.
The building is more interesting than the tenant improvement. It is a five-story cross-laminated timber structure of roughly 122,700 square feet, designed by LEVER Architecture, converted from a 1980s warehouse. Civicap Partners bought it from Redcar Properties in October 2025 for $35.8 million.
Who Is Behind It
Tohm Ifergan is Dayglow's founder and chief executive and owns Niteglow. He spent much of his twenties touring as a drummer for the indie band From Indian Lakes, working as a barista between tours, then moved into specialty coffee full time. He also writes about coffee for Perfect Daily Grind.
His brother Jonathan is involved. Sources differ on how much: one account describes the brothers as co-founders of both companies, an earlier one attributes ownership to Tohm alone. We have not been able to resolve that.
The Timing Is The Story
This one took a while. Niteglow first said Los Angeles was coming in late 2024 or early 2025. Reporting then pointed at July 2025. It opened in October 2026.
It is also opening into a contracting market. Craft breweries around Los Angeles have been closing, and Niteglow is adding one, inside a coffee bar, on a corner across from a train station. A taproom at Ovation Hollywood is reportedly in the works as well.
