The Brothers Sushi in Culver City, and the Dry-Aged Program That Came With It

The Brothers Sushi opened a Culver City location at 9240 Culver Boulevard in November 2023, taking over the space that held K-Zo for nearly two decades. It was the third room for chef-owner Mark Okuda, after Woodland Hills in 2018 and Santa Monica in 2022, and a fourth followed in Beverly Hills in September 2026. The Woodland Hills original is listed in the Michelin Guide, where inspectors single out the JYO chirashi bowl, dry-aged grilled fish collar and Hokkaido snow crab.


Okuda has more than 25 years behind the counter. Kenji Sato runs the Culver City kitchen as executive chef.


The dry-aging is the point


Dry-aged sushi still surprises people, and the staff spend real time explaining it. Aging concentrates flavor and firms texture while reducing the fishiness that puts some diners off raw preparations. The program covers bluefin tuna, Ora King salmon from New Zealand, kanpachi and hamachi, with seasonal fish imported from Japan.


The sourcing runs local as well. Produce comes from the Santa Monica and Torrance farmers markets, including ice plants from Girl and Dug, the San Marcos farm known for unusual varietals. That pairing of Japanese imports with California produce is what separates the room from the Sugarfish and Katsuya tier.


What it costs


  • Lunch omakase: from around $95.

  • Dinner omakase: up to around $200, offered in tiers so there is more than one way in.

  • A la carte: entirely acceptable, and many regulars mix. The signature chirashi runs about $45 and delivers omakase-level variety without the commitment.

  • Corkage: $40 per bottle at Woodland Hills for anything not on the beverage list.


A sake advisor is on site, and Culver City offers sushi bar, indoor table, patio and sake bar seating.

  • Hours: Monday through Friday 11:30 a.m. to 2 p.m. and 5:30 to 9 p.m. Saturday 5 to 9 p.m. Closed Sunday.

  • Reservations: on Resy or by phone. Takeout and delivery by phone, Uber Eats or ChowNow.

  • Parking: a lot directly behind the restaurant, which on that block is the rarest thing going.

  • Not ideal for young kids: no kids menu and omakase pacing is slow.
