Eyal Shani Brought Malka to Beverly Hills, and It Is the Kosher Room LA Has Not Had

The chef behind Miznon opens a kosher restaurant built on fire, in a hotel on Wilshire.


Malka has opened at SIXTY Beverly Hills, the first West Coast location for Eyal Shani's certified-kosher restaurant brand. It joins outposts in Tel Aviv, Manhattan, Brooklyn and West Palm Beach, and arrives through a partnership with Los Angeles-based Pagani Projects.


Malka is Hebrew and Arabic for queen or sovereign. Shani has described the concept as being about happiness, and framed the ambition plainly: that there is a world of kosher food carrying a precision and elegance many diners have not yet imagined. In Los Angeles that lands in a gap. Kosher dining here has grown steadily on the Westside over the past year, but a full-service room from a chef of this profile is new.


Who Eyal Shani is


Shani was born in Jerusalem in 1959. He has said his grandfather, an agronomist and a committed vegan, took him through markets, fields and vineyards as a boy, and that is where the cooking started. He opened his first restaurant, Oceanus, in Jerusalem in 1989, building a culinary language around olive oil, fish, tahini, seasonal vegetables and above all the tomato.


With partner Shahar Segal he now operates HaSalon, North Abraxas, North Miznon, Lilienblum, SHMONE, Miznon, Port Said, Romano, Mirage, Dvorah and Malka under Good People Group, which runs more than 50 restaurants worldwide. SHMONE, his Greenwich Village restaurant, holds a Michelin star.


Angelenos already know the pita side of his work. Miznon opened at Grand Central Market in 2025 and added a standalone Beverly Grove location at 8370 W. Third Street in March 2026, with a Culver City site at Platform also in the works, all with Giancarlo Pagani of Pagani Projects.


What to expect on the plate


Malka opened in 2018 around a philosophy of seasonal produce sourced from growers the team knows directly. Dishes across the existing locations have included lamb navarin, gazpacho, eggplant preparations and the Malka schnitzel, which has become the signature.


The format worth watching is the fire. Malka's West Palm Beach kitchen is built around a custom wood-burning grill with hibachi stations, flat tops, rotisserie skewers and a smoking cabinet, with the menu organized into sections called Knife Works, Cast Iron Works and Fire Works. Whether the Beverly Hills kitchen follows that layout has not been confirmed. If it does, it would be a kosher room doing something genuinely uncommon here.

Malka is at SIXTY Beverly Hills, 9360 Wilshire Boulevard, Beverly Hills, CA 90212, near Wilshire and Crescent Drive, a short walk from Rodeo Drive.

  • Parking: valet at the hotel, with metered street parking along Wilshire.
