The Brothers Sushi Opened in Beverly Hills, in the Room Sushi Kiyono Held for 27 Years

Dry-aged bluefin, Ora King salmon and a 27-year-old address on Beverly Drive.


The Brothers Sushi has opened a Beverly Hills location at 255 S. Beverly Drive, with a grand opening dated September 8. It is the fourth room for chef-owner Mark Okuda, after Woodland Hills in 2018, Santa Monica in 2022 and Culver City in 2023.


The address carries some history. Sushi Kiyono served that block for 27 years before its owners retired. Writing in November 2025, Toddrick Allen reported that a note on the front door set the final day of service for Saturday, November 22, and named The Brothers Sushi as the incoming tenant, with an ABC application posted alongside it.


The dry-aging travels with the brand


Aging is the through line across all four rooms. Okuda ages fish in dedicated units with controlled temperature and humidity, which firms the texture and concentrates the flavor while softening the fishiness that puts some diners off raw preparations. The program covers bluefin tuna, kanpachi and hamachi, along with Ora King salmon from New Zealand, a fishery the restaurant says has named it an ambassador. Seasonal fish comes in from Japan.

The Woodland Hills original is listed in the 2026 MICHELIN Guide, where inspectors single out the JYO chirashi bowl, the dry-aged grilled fish collar and Hokkaido snow crab.


What is planned for the menu


Modern Luxury reported that Okuda and co-owner Steve Vartazarian planned to carry most of the existing book into Beverly Hills, adding hot and cold starters, rolls, signature sashimi carpaccios, and entrees including A5 wagyu and grilled king salmon with yuzu butter. That report had the opening pegged for May, around Mother's Day. The doors ended up opening in September.

What we have our eye on


We have not eaten at the Beverly Hills room yet. First on the list is the dry-aged bluefin, the Ora King salmon, and whether the JYO chirashi that Michelin inspectors singled out in Woodland Hills makes the trip across town. Notes will follow a visit.
